Venison should be cut with margin – Swedish Dagbladet

Hunter families and others that eat wild meat at least a couple times a month have higher levels of lead in their blood than those who never eat wild, according to a survey by the National Food Administration and the Swedish Association for Hunting has done.

and the National Veterinary institution has also examined how blyfragment spreading in the wild game meat and the hunter should clean to remove all residues. It turned out that the lead is spread more than previously thought.

– At the cutting must be cut away properly around the wound edge, says Fredrik Widemo, research manager at Hunters Association.

With well meant further ten centimeters around all the meat is visibly affected. The margin of ten centimeters makes the lead content is reduced by up to 1000 times. So there is unpredictably much lead residue in the meat tends to be stew beef or ground beef.

To avoid the problem, the hunter choose ammunition without lead.

– I use myself entirely lead-free ammunition now says Fredrik Widemo.

An estimated one in ten Swedish eat venison from hunting within the family.
